How often do Poker Sites catch users that use VPNs and ban them/seize their funds?

They're not going to tell you, and they're not going to tell you

At least your title is accurate.

It varies based on the website, but I would say "often" in some cases, others don't seem to care much.

In short: 100% of sessions go through automated checks. If an account is flagged as high-risk, it won’t be allowed to play. Roughly 5% of players fail these checks.

Another 5–10% of accounts may be placed under enhanced monitoring due to triggers such as logging in from a new IP or country, sudden changes in location, use of data-center IPs, suspicious payment activity, or unusual behavior (playing hours, volumes, playing style).

The fewer risk triggers you generate, the lower the chance of getting banned. As for how often it happens - no one’s going to share those numbers anyway.

Usually if you are winning player and request a big cashout, you will be monitored too, and any excuse they can to deny your cashout will be used
