Am I playing too passive in these spots? Should I just fold pre in both these hands vs nits who won’t pay me off even when I hit? Anything I can do differently postflop?

in hand one you called 45 extra pre. Villain put in 8x that post so you are actually getting paid enough to set mine in that spot. just hit next time

Just fold. By playing so few hands, you know what he has. If you do call, only continue if you crush the board. He wants to play super tight then exploit that. Let him get nothing. Coach everyone else at the table after the hand is over.
If they're literally playing like 5/4/2, then yeah just fold a lot and don't play back.
No reason to defend preflop in H2. Could arguably turn it into a bluff, but this player's probably not worth the action.
H1's a little more debatable. You can setmine against his premiums and maybe have a prayer of realizing some other parts of your equity IP. I don't find the flop call to be worth it against a >1/2p bet. You peel one 'cause backdoors, then you turn some more equity and peel another, now you're down 50bbs against someone you JUST told yourself you weren't going to give action to.
I really don't think you're missing out on much EV just folding both of them.

You can just fold either/both hands pre. I know 77 can setmine, but even gto can fold 77 some UTG vs btn 3 bet, and thats a way wider 3 bet than what youre facing. I prefer to call with 77, im just saying if you fold, itll cut down on variance and just isnt a big deal as far as lost ev.
Definitely fold flop with 77 though.
Hand one, we can call to set-mine pre, and just check-fold flop when we miss.
Hand two, I think we can mostly just fold pre, unless or until we notice that V is 3B'ing us a little too frequently for him to always have it. In that scenario, we could 4B him, but folding to his 3B when we're OOP is going to make life easier.
If he's a nit who's only playing 1 hand every couple hours, I'd think he's not 3B'ing us often enough for us to want to play back at him.
Hand 1: fold pre to the 3bet, and fold more otf.
Hand 2: fold to the 3bet.
You described someone who's ultra tight playing 1 hand every two hours, so it's not about playing "in these spots", it's more about the player's range which should be crushing you if he's as tight as described.
