Villain was a bit passive (i.e. 25 VPIP w/ 0 PFR). Probably an easy fold in hindsight, but I dunno if I am being too weak passive laying AK down here. Tell me how bad I am at poker.

Yeah just bet fold turn. Esp vs a jam. He's passive . Ur hand looks like AJ+ a lot and he's still jamming into a strong range. Don't worry about getting exploited at these stakes
Just ask yourself in these situations - are you beating anything in your opponent's range?
If not, fold, and don't beat yourself up.
If your opponent is playing passively, you don't need to worry about looking weak by folding a strong hand. Your goal is to take advantage of his passivity - to fold when he shows aggression.
I will fold turn, is unlikely hes overplaying Ax single pair:
So here's a very similar spot where I folded... possible value hands Villain has are AT, A8, A3, TT, 33 maybe 88, and then a bunch of FDs and a smattering of other draws KJs of clubs, QJs clubs type stuff. Villain is higher VPIP but off virtually no history. Do you think similarly that this is a correct fold?

OK sweet TY. I'm learning! I think a lot of it is just kind of bad mental game / tilt / refusing to accept that the hand has been drawn out on / sucked out against and clinging to a fantasy that its still good or rage calling in the hopes that it is.

I think it is alot about expectations that we have. Like you said you create a reality where you already have won money = you get exited = dopamin gets released.
Becoming aware of when we are about to create expectations and activly imagine szenarios where we dont win the money etc. can help alot to find this folds easyer.
6x pfc+ jam t=passive nuts
