It is, yes. However, the content I watch suggests multi-tabling for volume whereas I heavily prefer single tabling. I'm concerned I'm artificially avoiding variance by targeting soft players and getting out when the session hits 3-4 hours (win or lose) or my stack equals 10% of my BR.

Poker is a very predatory game. If you're goal is to make money, then targeting soft players/tables is going to reduce the probability of a downswing. It does not necessarily reduce your variance, though. At least, not the statistic definition of variance. Your main goal should be to increase volume and skill level to also increase $/hr and/or $/hand.
Are you running hot? 100% yes as you run at about 80bb/100. Should you be concerned? Hell no.
