Is there any poker software that allows you to control all the spots/players?

I'm looking for poker software or a poker website that allows me to playtest poker which allows me to make the decisions for all the spots on the table (preferably i would also like to be able to turn the hands face up).

I am using this for theoretically purposes to test different poker "hacks" (postle theory optimal, always know the flop before it comes, etc.) to see which one is the strongest.
