But imo, tiebreaker formula should be:

- GOTW
- MNF (later start, earlier start)
- SNF
- TNF

If still tied flip a coin.

I'd much rather do something where we both have input like my idea of having one person pick 3 out of all games and other person picks the GOTW from those options.

Sure. But there should be other tiebreaker criteria first. The if still tied, whoever is lower in season standings picks 3, higher person picks GOTW. (or reverse those if preferred)
