Shouldn't There Be a Cheese Thread?
A thread for all things cheese. My favorite is swiss. In omlettes, on sandwiches, in my ramen. Grilled cheese on rye with onion and swiss and sriacha is the best.
Well **** my wife finally called my bluff and the post Covid world of remote work enabled my company to ok my move so I’m officially stuck in France permanently. The cars suck but the cheese options are good. I think I’m going to try a different cheese every week and kind of dork out on it and give a review.
lemme know what you think of the epoisse (it's the cheese in the top left corner of your pic) I absolutely adore it but it's too stinky for a lot of people apparently.
also pls let me know what you think of the langres as I've been wanting to try it for awhile but haven't found any.
you've been secretly posting form france this entire time? i need to disinfect my monitor

Really solid Epoisse, better than the couple I’ve had in the US in the past year. I liked the Langres but preferred the Epoisses over it. I’m kind of looking forward to the Livarot if my wife still has it. It’s sorta in between these two but with a really strong smell of wet socks, I love it.
The Beaufort the one that looks like a Comte was the best one. I’m not a huge fan of this type of cheese but this one was excellent.
excellent ty for the info hopefully I can find a source for these in the US that isn't ridiculously expensive.
mother in law hooked it up
Gruyere, double cream gouda, and mousehouse jack on sourdough
never tried a triple on a grilled cheese
do they just kind of mesh together or can you taste the different flavor notes?
The gruyere stands out a bit but everything else melds together
damn da nit you're killing it.
if anyone has a good place to order cheese online for reasonable prices please share as the spot I use I'm almost positive is massively over charging (igourmet)
RBK,
I won't claim that this place has reasonable prices, but it is by far the best purveyor of artisanal American cheeses.
heeeyyyyy...we want epoisses!
thanks for bumping the thread, reminded me i have a pack of 2014 tillamook extra sharp upstairs i bought at the factory a coupla months ago, still unopened

an easy scrolling web page well composed with quality dairy photography
who again of us qualifies to be the sophisticated one?
isn't farmer owned redundant
if you own a dairy company, you are therefore a farmer
it's like writing "human owned"
Bethmale sounds like a heavy metal band name but it’s just a cheese. I would describe the taste as a really good Swiss cheese but nothing great.
The second pic is Brin D’Amour, the herbs are a nice touch, it’s a less aggressive sheep milk cheese. It’s fine but I wouldn’t buy over other sheep milk cheese.
The last one is one of my favorites Livarot. It’s a a soft creamy Brie/Camembert type cheese in consistency. It smells like the worse pair of stinky socks you ever had, it’s the idea French cheese. If you leave it in the car for more than 10 minutes it’ll stink like for a couple days.
I’m staying right now at my in laws in countryside. My mother in law spends way too much time in the TJ Max equivalent but they sale beer here and this German Helles ain’t bad. I’ve been drinking a few on the bench under the tree in the 2nd pic
oh man nit living the good life!
def gotta try some of that liverot, who knows maybe it'll get my wife to actually beg me to get more epoisse instead!
I think you sent more than one but this is the only pic I could find:
The cheeses were great. The meats, not so much. I'm not sure if it was a me thing or if I ruined them, lol. I ended up taking the meat with me on a road trip and didn't refrigerate them, so I was thinking maybe I screwed up.
I had my 2015 Tilly just about 6 months ago from the gift pack my Mom sent me a few years back (Willpower. I haz it.) Was nice having the several years to compare. I didn't open more than one at a time, so I couldn't do side by side comparisons, but, as you would assume (look out!) they did change and get better with age.
Thinking I might need to order some more.
