I thought it was Austrian-Italian fusion. Probably great potential in the aforementioned Alabama. I'll defer to others' knowledge of Minnesota tastes.

We must have some similarities in our life experiences.



Deboned turkey rolled around chorizo stuffing (with lemon, breadcrumbs and parmesan). About 2.4kg

Roasted at low heat for about 3.5 hours at 160C. Covered and with a lot of stock in a foil tray. Basted regularly



entire plate looks less appetising and appears before the home made gravy was added

Roast potatoes, roast sweet potatoes and roasted carrot and peppers. Peas, broccolini, Yorkshire Pudding and pork sausages wrapped in bacon

All vg and I weighed in 2kg heavier this morning than on the morning of the 24th!


More like 2kg happier!

That's a joke dish made with gelatin, but the dishes using aspic (meat jelly), popular in the 70's, were very real, and way, way more disturbing!







That bird looks fantastic, as does the plate with all the sides. A+++


Neighborhood Christmas party yesterday. Only snapped one shot of the porchetta but was a big hit.

Didn’t have a plan for dinner but I had some ingredients

Taco pot pie with buttermilk biscuits

Filling is: chicken thighs dredged in flour, cornmeal, cumin, chili powder, garlic, salt, pepper, and seared; onions, red bell pepper, garlic, hatch green chilies, Mexican lager, sour cream, water, with fresh broccoli florets added before the oven. Cooked on the stove until veg and chicken were happy then topped with biscuits

Normal biscuit recipe, 425 for 15 minutes.

Jack - have you tried a version with cornbread?


My dad used to make tamale pie when I was growing up which has cornmeal in it (as he made it) or cornbread on top, which is what inspired this. But I didn’t have any corn so I pivoted to more of a chicken pot pie format with different seasoning


makes sense, tamale pie is what made me ask.

now you got me wondering about a version incorporating chochoyotes. use masa on top in some form (probably the traditional ombligito dumpling shape) arranged in the pattern of your buscuits above to create a similar effect.

the big question is the cook: chochoyotes are typically simmered in broth, not baked as a stand alone item. unclear how that might turn out
