soft scrambled egg with green onions and cheddar on buttered grilled ciabatta roll

Gorgeous

Thank you! They were both really delicious, especially the potatoes in pic one!

VR, what Mal said.

i was also going to comment on those taters, perfect for a runny yolk
love the use of green onions as well. we've been keeping them in the fridge recently, which means we use them more than usual

Both very solid VR. Both look A+.

Very nice

A Harvard medical student ate 720 eggs in one month (two dozen eggs per day) and his bad cholesterol actually went down, which was the reason he did the study, to prove this.

So there's now no need for anyone to ask for an "egg white omelet" ever again!! (it's also the same with natural animal fats like butter which increases your energy for the day).

That's why I add a couple of TBSPs of lard to a fresh brewed pot of coffee in the morning. Really helps those first few lung darts go down smoothly as well. 🚬

The lies we've been fed for decades are ridiculous. From 'eggs, butter, steak BAD' to the freaking nutritional pyramid being literally upside-down. Complete clown world.

Ty, I eat many eggs lately....although NOT 720 in a month....and I really think it is showing in the consistency of my egg cooking. 🙂

today's renditition of the old standby
butter, salt, pepper, ham, lidded
a touch over for my liking but still salvageable

Mouthwatering.

Mushroom/onion/cheese/ham with a couple slices of toast.

i don't eat omelettes as much as i should, spouse makes up for it
curious your opinion on when to cook and the filling
also curious if there was liquid for toast dipping 'cause that's my jam

Onions first and after a minute or two mushrooms and/or peppers. When browned I take out and do whatever meat I'm using. Throw the cheese into the filling on the side while I cook the omelet. After flip add everything then plate it.

I only really dip toast in uncooked egg yolks, never plan for dipping with an omelet.

I do often make a mini sandwich or two out of the toast and part of the omelet.

👍
similar approach, although half the time i get lazy and just do a hard scramble in the pan with all the fillings

Yeah, same for me. Sometimes I do all the filling at once and just pour the eggs over if I'm hungover or just don't have the energy.

There's also this, from half a century ago:

Anybody else prefer French fries instead of hash browns/tots with they're eggs??

will consider if double-fried in animal fat.
a smashed tater tot is hard to beat
