Baking a good loaf of Bread (and everything else)

My inlaws love the sourdough from a local bread shop, my better half loves the caraway rye, at 7-9 bucks each and the fact i just installed a new convection oven i thought i might give baking bread a shot.

Anyone here have any good/favorite recipes for sourdough with a good crust?
Any other favorites?
Or perhaps just a good resource for recipes?

I've started making sourdough bagels and they're the only thing I want to eat these days





bubbles suggest fostering a sourdough starter
baking boiling or both

also curious if you schmear dairy product
or alter in any other way before consumption


Boil before baking obv, otherwise it's just mini bread with a hole in it. Don't have any schmear cheese at the moment but sometimes melt cheese or schmear peanut butter. Fresh out of the oven a couple go straight into my mouth


herb cream cheese
thin sliced red onion
ripe tomato slab
liberal salt and pepper


Good lookin' stuff 'orio!


1000g AP flour
880g water
10g yeast
20g salt

48 hour cold ferment with stretch and fold

Split to two with different size pans, fresh rosemary, sea salt, and extra virgin olive oil. 425 for 30min

Looks great. I haven't made foccacia in a long time. Might be due.

I regret to inform you it has all been consumed but the crumb was nice.
