Tri-Tip is one of my favorite cuts... not because it's the most juicy or fatty flavorful, but because I grew in an area that really in known for the

Tri-Tip.
add some fresh mexican pico de gallo and fresh bean and life is all good.

Huge fan of hanger steak too.


I make modified carne asada tacos with tri-tip and they are outrageous. Cilantro, onion, cotija and salsa verde on top. I dice and marinade like 2-3 pounds.

Those tacos look amazing... amazingly good.

I always reserve verde for pork... red meat, red salsa, but that's just me.
