Raw tuna purchased in the morning.

Wife made us Gin Rickeys, tasted great outside on the deck. Now I gotta start planning for next Friday’s app.

did you give the tuna a lime squeeze or leave it truly raw

asking only because i'm curious and not trying to recreate it at all

I went totally raw no seasoning of any kind on the tuna. Saw lots of recipes online that marinate it like poke, but I didn’t want them to be poke nachos. Let the rest of the ingredients bring the flavor.

Where did you get the tuna? Just curious. Not sure if you know, but Red's Best offers sushi-grade tuna and salmon on Friday's that can be picked up at the pier.


Hit the new Costco in Sharon. Got there early and got tuna packed on the same day. Researched it online and their tuna is fine to eat raw (as long as it’s fresh which is usually the case there).

I used to go to Boston much more frequently. If I remember correctly I used to get Toro steaks from Red’s best. They would setup on the greenway during the week. It was so damn good!


Interesting. Thinking of hopping on the Costco train with the new Sharon location. Also recently saw a guy buy an A5 Wagyu WHOLE ROAST for like 250 there, which inspired me for the next FL bros trip in November. Offered up my services for an A5 Night to the host and he auto-accepted.


Been meaning to try potatoes fondant forever and just never bothered until last night. May be my new favourite way of doing potatoes now. Used Babish's Basics as my guiding light.


That's definitely my favorite method of ingesting potatoes.

Edit: I watched the Babish video. I add a lot more garlic. Some nice roasted garlic to smear on the potatoes is really good.

100% agree, I was very sad when I realized my mistake only putting a few cloves in. Going to throw a whole god damn bulb in there next time.


Went with mushroom parmesan chicken last night.




pork chops on an open fire / grill are tricky! grilled a couple over the weekend.

Next time I'll separate the chop, bone, and the other little bit of meat. There's so little leeway between perfect and dry on the chop, whereas the fatty/bone can take more heat and smoke.

It's like they are two different cuts. I prefer light pink. Even if its more red, its a trivial thing to bring up the temperature, the other way? not so much

i bought a couple 'iberian' pork chops, they are fattier but as far as taste, not super different than industrial pork

I'm happy to announce a breakthru!


Super easy to make. I followed the instructions here:

sides of white rice, shredded lettuce with a dab of thousand island, grocery store mac salad (enhanced with some add'l mayo and a splash of red wine vinegar), and cranberry sauce.

meat was a bone in pork chop on sale, removed the bone, trimmed the sirloin/meat around the eye. used scissors to but slits around the fatty areas

Bought 3+ years ago; I'm sure there are tons of china knockoffs now. I got the stainless deluxe combo kit ($120 now, I paid $89 way back when); its handy to start a fire/cook without the hassle of setting up an actual log fire.

It also works with charcoal and is fun because it can output some epic flames
