I don't get how chopsticks are still a thing since the invention of the spoon and fork. I guess it's kinda like when you pass an Amish horse and buggy on the highway, you're like "Awwww, look at the old timey people, aren't they cute?".
Some foods eat faster and easier with chopsticks and some foods taste better with wooden utensils instead of metal ones. Sushi, for one.

You spend time and care preparing food and then you want to stab into it? Breach the surface? Bruise it?
Why not just pick it up?
I think stabbing, breaching, and/or bruising it a mere second before I grind it to smithereens with my teeth should be fine.
It's possible (and by that I mean likely) I have an addiction. I used to purchase a new plate or bowl every month as a treat to myself. Since I now have two bins and an entire cupboard full of plates and bowls in various shapes and colors, and extras stored on top of my refrigerator, I have given up that habit.I also have flatware in both chrome and rose gold, a gorgeous array
in my apartment I had one bowl. it was a gigantic stainless steel bowl, and I would just eat everything out of that. my gf at the time bought me two plates. I hate plates! bowls make plates obsolete imo

my current place has a lot of stuff, but it was just left here by the guy who lived here before. he was too lazy and rich to bother moving it. and I said he could leave it.
one time in the 90s, I had a date over and I cooked dinner for us, served it up, and then realized I owned only one fork. so we had to share the fork.

Don't get me wrong. I used a fork and a spoon 99.9% of the time, but I can also see it from the other point of view. Chopsticks aren't old fashioned liek a horse and buggy they're just what a different culture uses.
Seems like a skill/empathy issue on your side.
chopsticks are fantastic for eating things like potato chips, especially at the poker table.

Definitely a skill issue.
I think the analogous situation would be if he had only one pair of chopsticks why would he only have one chopstick.
Then he wants you to give him a haircut but he only has one scissor.

eating western food with a knife and fork feels absurdly clumsy to me

When my mom and dad were first dating as poor "just out of/still in college" students, they used to go out for Chinese food, get lots of rice, and split an entree.
My dad finally gave in and learned to eat with chopsticks when he realized he was getting less than half of whatever dish they ordered. My mom could eat circles around him with the sticks, and as the middle child of three, made zero apologies about claiming every bit that she could since, in her house, if you snoozed on taking food, you might not get any.
It was dinner and delicious--and I have to give it to filthy, the runny egg yolk dripping down achieved maximum potato encasement thanks to the vessel I was eating it in.
