Thanksgiving / Holiday Feast thread

Last year:

I figure one thread is sufficient for our remaining 2013 gluttony. So what does everyone have planned?

I'm doing Thanksgiving at my place this year and am planning to mix it up with some twists on things instead of going traditional style. Here's what I have so far.

Pumpkin is super-Thanksgivingy, so I'm doing PUMPKIN LASAGNA: http://www.foodandwine.com/recipes/pumpk...

Honey glazed ham is always good, but I'm gonna take it up a notch with HONEY GLAZED LAMB: http://www.foodandwine.com/recipes/honey...

And instead of roasted turkey, I'm going with ROASTED CRAB.

Working on the rest of the menu, but it'll prob be salad, rolls, green beans, and a couple of pies.

Sup peeps

Butchered a small turkey to make a roulade from the legs, stuffed with dried fruit, leeks, spinach and lemon zest 155f/4h sous vide

Breasts were injected with apple juice, milk, salt and sugar per modernist cuisine, 142f/2h sous vide

Made some crisp out of the breast skin between two sheet pans and silpats with weight, 330f/2h in oven

Green bean casserole, mashed potatoes, Mac cheese, gravy, cranberry relish

You're on fire! Great job.

God damn! There isn’t anything much better than a roulade. Tremendous!

Jack, that looks great! I like the cranberry relish. Is mac & cheese normal for thanksgiving dinner? Not that I am complaining as I should probably do that next year.

That spread looks fantastic!
I can confirm that mac & cheese is normal in some families. It was on the table at my daughter's home yesterday and surprised nobody. I can not confirm that the family is normal.

Pies for this year.

Mac & cheese isn't out of bounds. I've been going to the same Thanksgiving with friends for the last twenty years and the lineup is always the same.

Deep fried turkeys
Mashed potatoes
Sweet potato casserole
Mac & cheese
Stuffing with sausage
Roasted brussell sprouts
Braised collards
Sautéed green beans
Homemade cranberry sauce
Gravy made from the giblets, etc
Dozen or so homemade pies, which vary somewhat from year to year.

Holiday food. Not this year, but back when I gave a **** about cooking. Christmas 2019. Smoked Prime Rib, skillet potatoes and borracho beans. KISS - keep it simple stupid
