pretty sure 27 has made them before with better results
i tried eggs in a small pan barely covered, brought to a boil then low simmer for 6 minutes. shocked under tap cold water before peeling
toast the bread to your own preference

toast the bread to your own preference

If you didn't, gently crack them all over before the cold water. Allows water to get between the shell/membrane and the the egg.

Very, very rarely have any issues with peeling when I do this.

attempted six minute jammy eggs with wheat toast, maldon and pepperthey were not easy peelers and look like a crime scene, but a delicious four bites nonethelesswill try again

the fresher the egg the harder it is to peel.

i must make my runny in middle scotch eggs this week if i think of it i will send pics here. I dont have a deep fryer anymore so might invest in one

i always do 3 mins from the time it start to boil always perfect runny
my dad does the 6mins total from cold

just dont put a cold egg in boiling water will likely crack

eggs were being boiled long nefore kenji 😃 i have wattched lots of his stuff and most seems very amateurish


I use the method from The Food Lab and it has produced perfect results 100% of the time.

A lot of his stuff is saying classic cooking says to do this x way. Is that really the best? And trying 20 slightly different methods.

Of course to an experienced cook sometimes what he ends up recommending isn't the classical correct way. but just because something is what you were taught doesn't mean it gives the overall most reliable experience every time either.

Yeah Kenji has no skin in the game. He takes a scientific approach. For boiling eggs he did number of experiments a ton of samples and it was concluded that the easiest to peel and most consistent boiled eggs are added into boiling water. The results were published in the NYT. Sometimes his best results involve a much more complicated process that I feel sometimes aren’t worth it. Adding eggs to boiling water isn’t that difficult and it’s more than made up for it when it comes to peeling at the end.

Don’t take Kenji’s word for it. Boil an egg as he recommends and see for yourself. To continue doing something just because that’s way gramps did and the way it’s always been done is…

Today's eggs were an omelet with smoked pork neck and cheddar on multi grain with a little hot sauce and mayo.

Soft boiled eggs. I do four minutes into boiling water then run them over cold water. My kid lies them runny but think I’m going to bump it up to 5 minutes.
