Las Vegas Fine Dining Thread

So I'm compiling a list of places I need to go to, never been before but I have so far been told that we should hit up:
1. Nobu at the Hard Rock (seafood but like fine Japanese food)link
2. N9ne at the Palms (stakes imo)link
3. Ago at the Hard Rock(Italian)link
4. Prime at Bellagio (Stakes obv)link
5. CraftSteak at MGM (STAKESSSSSSS) link
6. Mesa Grill at Caesars (some kinda grill?) link
7. Fix at Bellagio (i have no idea i read the description, this could be ANYTHING) link
8. SW Stakehouse at the Win, obv stakes, for some reason wynn has the worst godamn website ever so no link=/
9. Bouchon at the Venetian (french, head chef is Thomas Keller, guy is fcking sickkkk) link
anyway, add to my list or tell me to avoid places on my list for reasons.
Sorry mods, I don't know if this actually belongs in the LV FD or in the casual but I'm kinda of shocked about the challenges getting into Carbone? Back when the place opened for the first couple years I could walk in the place (especially if it was earlier, or later) and usually snag a table for one (at least in the non premium times/summer time, non big event weekends etc) like especially on a weekday. Now, not only can I not get a reservation at all, I can't even sit at the bar? I was told no
Go to Mother Wolf instead. It’s better, cheaper, and no problem getting a reservation or going to the bar.
My go to Italian in Vegas is Piero’s.
I’ve never been to carbone, but I can’t see any reason for the insanity of getting a reservation there. So just get awesome Italian food at any of the other places in Vegas that can provide it.

It’s Vegas, there are between 6 and 600 fine dining restaurants here depending who you ask. You are completely right about the popularity, it became even more the it place to be than when it opened. Btw, single guys in this thread, becoming a regular at the bar there is a pro move.
For the old guys, I would equate it to what n9ne at the palms used to be. The food is above average but the environment is 10/10. When everyone is having a great time, food is good, service is great, it makes for a great vegas restaurant. I think the move is go before they open, slip the front desk girl or better manager a 20 and ask if you have a table sometime tonight and that you are flexible with time. I think there are alternatives in terms of good southern Italian food in vegas, but there really aren’t alternatives when it comes to atmosphere.
Partage last night before Atomic Saloon. The halibut and squid course was excellent as was the lobster. One of my favorite restaurants in LV. The 7 course was $140 each. The final bill was $370 including 2 drinks each.
I could have three orders of the lobster and call it a day.
zuma premium omakase. $174 each (without drinks). Everything was very good. I liked the prawns a lot, but I was struggling by the time they were served as Gwen only ate 3 things from the sushi course.
negroni and espresso martini
sliced seabass sashimi with yuzu, truffle and salmon roe
prawn and black cod gyoza
seared tuna with chili daikon and ponzu sauce
salmon and tuna tartare
chilean seabass tempura with fresh chili dashi and red onion
toro and yellowtail sashimi, salmon belly sushi, and a fatty tuna roll with finely diced scallion roll
black cod marinated in saikyo miso wrapped in hoba leaf
sweet corn with shiso butter and shichimi pepper
8 oz signature rib eye with wafu sauce and garlic crisps
jumbo tiger prawn with yuzu pepper dressing

Haha let’s not complain too much about more value and more food. Not the most creative menu but I know for me sometimes just the classics make for an incredible meal. I think like normal you made a great call for dinner.
Btw, leon posted pretty much the exact same zuma meal and no one cared.

here's my contribution to the fine dining thread.
ate at Kyu at Fontainebleu last night. I'm not a big fan of fancy food but with some dining credit wanted to take the wife out for a fancy meal.
Sunday 7pm the place was rather empty. it did fill up a bit by 8pm. good chill atmosphere, all the staff was awesome, made us feel like VIP.
corn ribs: quartered cobs with some kind of aoli and Japanese pepper and squid ink was mentioned which sounded weird but there was nothing but deliciousness
grilled octopus with vinegary vegetables: wife loved it, I did too. the meat surprised me with how good it was. didn't taste too fishy.
duck breast: takes 30 minutes to prepare. perfectly tender, perfectly seasoned, already sliced so it was easy to eat, the sauce was a perfect compliment. could not have been better.
dark chocolate s'mores cake with banana-bourbon ice cream. one of the best desserts I've ever had, what else can I say? the cake was unbelievable. we do not drink alcohol and I didn't tell the wife about the ice cream before but it was definitely boozy. and amazingly delicious. she didn't let me finish the ice cream but I wanted to.
I have nothing but good things to say about the experience. loved everything about it. bill came to $128 which felt like a steal. highly recommend.
in my two brief visits to Fontainebleu, I am very impressed.
Wow Kyu does look quite interesting and the reviews on Yelp are excellent. Why didn’t the wife let you finish the ice cream? Did she eat it herself or was she concerned you’d enjoy the bourbon too much?
bacon is a gift pigs give you when you've been good.
Also went to Kyu this week, great food. Highly recommend. $135/person including a round of drinks and tip. Way more than enough food, we couldn’t finish it all with 4 people.
Tuna tartare - 9/10
Pork gyoza - 7.5/10 (sauce 9/10)
Wagyu tartare - 10/10
Crispy tuna rice - 10/10
King crab stone pot fried rice - 9/10
Short rib - 9/10 (only because Texas reigns supreme for beef ribs)
Pastrami Pork belly bao buns - 6.5/10
Smores cake with banana bourbon ice cream - 10/10
damn that looks incredible
Food looks great, but I've gotta ask.... is the silverware drawer for the table or per person? Not sure I've seen that before.
