For all votes to be counted, it takes several weeks, yes. Always has.
The reason why we know early in the morning who are likely going to be the winners in most elections is based on probabilities. Let me guess, you're a feel poker player, eh?

only people living in other countries can vote by mail, and they have to post the votes like 2 weeks before the election and they get opened and counted the moment the voting closes.
precincts are 1k votes each more or less , 4-5 people counting, you start one minute after the polls close. and they count as specific "distance precincts" it's not like my bologna neighborhood has to count distance + real votes, that would be pretty low IQ to do.
how the hell is it hard to do? you want distance voting just have special precont+-counters for that. Germany does that and counts within 8 hours.
btw afaik Florida and many other states do the same.

Do you guys also have all the local propositions, state propositions, local govt seats, DA, Superintendent, parliamentary representatives, etc... all on your national elections? That could be another reason why the vote counting can take so long. It's not just president and senator. California's ballot is like 4 pages.

I mean this is one of the few things the state has to do, so just spend as much as necessary to count within 24h, how is that hard to understand as a priority? it's the actual pillar of actual democracy, it comes before food in school or healthcare, possibly even before law enforcement and soldiers, it's hard to think of a single destination for resources for the state more worthy than guaranteeing all votes are counted as fast as humanly possible.
