Personally I think once you’re very very good at PLO5 there’s not much in it no, the variance is so insane that there can’t be much in it. And if they both thought there was an edge, they’d be playing all the time and they aren’t. Is your assumption that in a games with high variance there can't be decent edges correct? Why do you assume that because there is lots of luck involved, it won't be possible to obtain high edge in such a game?
The high variance is a very positive influence on playing against regs. Especially for heads up - it‘s nearly impossible to get a large sample against one opponent to find out, who is really winning. You just believe that you got the edge.
The variance has no influence on the edge just on the actual outcome. In my experience the edges in 5card plo tend to be bigger than in 4card.

I just assume that because of the variance it’ll take longer to ascertain who has an actual edge. Perhaps there’s stats and nuances in certain spots that can clearly show you who has the edge and variance is just the result. Who knows, but it’s surely razor thin if there’s an edge at all at this level imo.
Phrase it how you want, more cards = less solved = more complex = more uncertainty = bigger edges.
