the inspiration for my post was thoughts of childhood okie onion burgers from a roadside bait shop out in the middle of Nowhere

it was the only place on the south side of fort cobb lake to both catch and cut bait and they made an amazing burger served in a plastic basket with red and white checkered paper

Yeah bro I know I posted knowing you’d mention this. I think Oklahoma has probably the best regional style burger outside maybe the California style with lettuce, tomato, pickle and cheese which has become the standard burger.
Back home which on the East coast we have super regional styles. There’s our regional burger back in Rochester, NY with a white American type cheese, what we cal a hot sauce which is like a meat chili with a lot of cumin. We then have a very pickled type relish and a better than average. Italian style bun. I’m nostalgic for it and like it but give the nod any day to an Oklahoma onion burger.

50 years ago I would have added the West Texas burger, with grilled jalapenos, bacon and the japs under the cheese. Now it's possible to get jalapeno burgers outside of Texas, so I don't think they are as unique.
I like the California style, but somehow associate it with the belief that it is somehow OK to put mayo on a burger.
I can still remember the first time I had an OK burger. How big it was! And how sweet the onion. I've got a long story about Okie burgers, but I am going to spare you. (I don't want to resurrect the egg salad riots. )
Oh man I forgot in New Mexico and oddly enough in Midland Texas they do a a roasted hatch chili on a burger which is great.

Never heard of George Motz? He’s a burger historian and has a bunch of YouTube videos on regional burgers styles. He also has a restaurant in NEw York where he roasted burgers.

Any y'all been to Port O' Call in NO, La for their burgers? Picture if you will an overdone broiled patty, thick, but not a sign of pink in that bad-boy. Dry as the Sonoran Desert in January. A crispy outer crust. Shredded cheddar cheese piled on top. LTO if you want 'em. Probably on a baked in-house bun.
50 years ago, I can remember my mom cooking us burgers just like this (hockey puck comes to mind). These sent me right back there.

Maybe I’m an exception as I’ve been to Midland and West Texas a bunch of times and I feel as though both are a well known or not as well known equally. If you’re familiar with West Texas you know Midland.
In the 70s, every diner between, let's say, Brownwood and Tucumcari called them Midland burgers. As I remember it, the new Mexican green chilies were highly seasonal at the time, and it was always a big treat when you could get them on your burger. I haven't heard the term in years and always assumed that the burger chains and the Interstate killed them off. Best ones I ever had was in a motel diner on 66 in Gallup. Always good there.

I realize I am removed from Vegas a bit, but these are a lot of posts about burgers in a crappy burger town.
New downtown spot Echo just opened a few days ago. Interesting concept, cocktails and small bites centered around a super high end McIntosh sound system. The subwoofer they have is $35k alone, I’m sure the whole setup was well over $100k.
The owner is Natalie Young who also had some other downtown restaurants like Eat. Food was very good.
Cocktail ($18) - 8/10. Their take on an old fashioned. Menu described as “bourbon, popcorn” which was pretty accurate. Maybe uses some kind of brown butter bourbon.
Beef skewers ($16, some kind of Wagyu) - 8.5/10
Chicken skewers ($8) - 7.5/10
Tomato bread ($8) - 9/10
Sound/vibe - 10/10
Definitely would go back, very cool spot and good to see it was busy while I was there since they just opened.

Is it loud? I can't stand loud restaurants, but maybe that could be the point of this one 😉
One thing I really dislike about eating out in America is the loud music and the loud people.
