got some whole foods 90/10. they were out of the 80/20. 1.5 large crimini shrooms, a bit of sliced onion.
cooked the bacon a bit first to get the fat, then the shroom/onyon

side shot with bacon. did one slice of swiss/ one of american processed

halfway thru eating. reminded me of wendys for some reason. couldve made more shrooms/onyons

need to go a bit hotter next time, think I was like 7/10. very good but couldve been better with more crispification.

90/10 is a challenging blend without outside fat and that wonderful mushroom onion saute stole most of what the bacon had to offer

Exactly, should've been higher temp. it was a 7 when it shoulda been an 8, or I couldve preheated the pan more. It's been a while since I made a burger. Also, I should've added another slice of cheese.
Actually,. I'd say it reminded more of a whopper, especially if you look at the half eaten pic. 90/10 may be a good opportunity for a juicy lucy or butter burger.
The fries are ore idea extra crispy FF fries. Fries technology has advanced bigly since the days of baking crinkle cuts in the oven!
Try #2: 9/10!
Cooked down 2 thinly sliced large mushrooms and onions for 15-20 minutes with a knob of bacon fat and a couple of pieces bacon. added a decent amount of salt, pepper, plus a couple shakes of johnnys seasoning.
1/4lb 90/10, with a little bit of butter in the middle.

Got the pan to around 600F, smoking. About 1 min per side-ish

I made some birria tacos from brisket and rendered all the fat from the brisket and made tallow fries (boiled potatoes first with vinegar for around 6 mins, fried at 275 then fried again at 360 until brown and crisp, SO good):

Dont throw that fat away from your brisket, etc. I got 16+ ounces of tallow from half a brisket and the fries are SO much better than peanut oil, etc
Next time, I'm going to smoke the fat before I render it to see how the flavor comes through in the fries
I air fry whole chickens all the time. Fantastic!
I had the wife, Latina, make me up some homemade Birria sauce so I can use it on all of my left over Chivo... I still have 2-3lbs+ sitting in a container from that leg I cooked.
It was really good and supposedly going to be better tonight, according to the recipe. Unfortunately, due to pace and never having hands clean enough to touch my phone, there are no in progress photos. Then I was late for my nephew's HS baseball playoff game, so wasn't thinking about photos. This is the only after photo, taken after bite #1. I'll try to do better tonight. I think I need VR to come oversee photography.

Not sure how you couldn't wipe your hands off to take pics of your prep, but you were able to set that thing down after taking a bite of it. You have more will power than I do. My pic would have been of a dirty plate.

I love those plates too. They're heavy and have a tall lip, which I like. They lost Thursday 13-3 and last night to a balk in the bottom of the ninth, so his hs baseball career is sadly over.

Oh man, dinner tonight was 3 fried eggs smothered with the leftovers. It was great. Pretty sure all the remaining leftovers will be eaten the same way. Maybe with some fried corn tortilla strips thrown in.
