Took some chicken breasts and sous vide them with the chipotle marinade mentioned above (Chipotles in adobo, garlic, lime, cumin, cilantro)
Chipotle marinade blended with sour cream and lime juice
Fresh masa tortillas then fried the diced chicken on the comal
Summers peak brand frozen fire roasted veggies from Costco
Baby spinach and cilantro

mung bean dosa with spiced potatoes, peanut chutney and sambar

creamy pasta with shrimps

home made roti wrap thing with marinated pork, guac, yoghurt sauce, hot sauce, etc

spicy black beans and eggs for breakfast

air fryer tandoori chicken with mint chutney and some sides. this chicken was great. marinated for 24 hours in yoghurt, lemon juice, chilli powder, salt, garam masala, mace etc. airfried til crispy, then finished in a pan like this: lit a piece of charcoal, place charcoal in a ramekin in the pan with the chicken, pour some oil over the charcoal, then put the lid on to let it smoke and steam for a few minutes. gave some great cheat BBQ smoke flavour

All of that looks great. I might need some eggs and beans for breakfast.
